Some mechanical changes:

From Yarn to NPM by popular demand (although you can easily switch to Yarn if you prefer)
Removed Gulp build step in favour of using Eleventy's built-in watcher and re-compilation
Moved from Sass to PostCSS for CSS pre-processing
Added Netlify Dev instructions and makes use of some of its facilities
Simplifies serverless function pipeline through Netlify Dev
Use of Netlify redirect rules for proxies

...And a multitude of typo fixes 😳
